Job Title: Catering Manager

Reports to: Contract Manager/Project Manager

Location: British Embassy, Baghdad, Iraq

Note: May be required to share a bedroom whilst working in some countries. Wearing of body armour (jacket & helmet) may be necessary when carrying out all duties

Key Responsibilities:

Delivery and management of a first class catering facility, ensure all meals that are served within and outside the Dinig Facility (DFAC) are to the highest standards and within the ISO 22000 guidelines and under the specified budget. You will work on a rotational leave basis, but will be flexible with the leave if required to cover outside your plot.

  • Manage and control a busy kitchen feeding between 1 – 350 persons daily
  • Complete the monthly catering accounts and reports ensuring accuracy, submitting to the Contract Manager, explaining the reports if required to do so.
  • Monitor and record all feedback from the customers, positive & negative. 
  • Maintain and develop the current Corporate Standard Operating Procedures and report directly to the Contract Manager.
  • Have an excellent understanding of the ISO 22000 Operating Standards.
  • Be responsible for all aspects of administration and ration accounting processes required to ensure the smooth and efficient running of the kitchen.
  • Responsible for the security and control of all food items
  • Ensuring the service is provided to the correct quality and under the specified budget
  • Co–ordinate the corporate policy on the provision of catering services to the customer within the boundaries of the contract.
  • Ensure that all legal and health and safety issues are followed and maintained according to guidelines and policies
  • Liaise directly with senior site personalities as part of your daily routine and respond in a suitable timely manner to queries from the client or nominated representatives.
  • Instigate, monitor and control safe systems of work to include all aspects of food safety, health and safety food accounting and menu planning.
  • Have overall responsibility through the Contract Manager for all staff under your charge.
  • Produce reports when and if required.
  • Direct and monitor a generic training policy for all staff to the highest standards
  • Maintain up to date training records and food handlers certificates for all staff and arrange further training as, when and if required.
  • Provide training to up skill their team where required
  • Responsible for discipline within the kitchen environment.
  • Responsible for the security, control and use of all job related equipment and hazardous materials within the Kitchen.
  • Manage all staff in a sound, fair and logical manner ensuring the good name of the Contracting Entity is upheld.
  • Liaise with the client to fulfil any additional requirements and special functions and theme menus.
  • Ensure all areas of the DFAC are cleaned to the highest standards at all times, following the cleaning schedules.  
  • Assist in the implementation of a new Catering Reporting System and be responsible for reporting through the system ensuring accuracy.
  • Other tasks as designated by the Contract Manager and/or Project Manager in support of the contract
  • Ensure that the good name of the Contracting Entity is upheld at all times
  • Ensure compliance with Contracting Entity COBC and ethics policy including all FCPA and Bribery Act rules and regulations
  • Travel to various locations covered within the contract (e.g. Middle East/Africa) to cover emergencies as requested by the Project Manager
  • Not to conduct tasks outside of the contract scope without prior permission from the Project Manager


Qualifications and Skills Required:

  • Minimum of five years’ experience in a senior catering management role and be a fully qualified Chef.
  • Minimum qualified to food safety Level 4. 
  • Be highly motivated, strong, confident and articulate. Have good people skills and be a sound communicator.
  • Have a proven track record in the management of a large team in a busy and demanding environment.
  • Have a sound knowledge of all current HACCP legislation
  • Be fully qualified and experienced with Current UK Food Safety policies.
  • Be able to work under pressure and to tight deadlines.
  • Have planning and organisational skills.
  • Previous experience of working in remote and hostile environments is an advantage
  • Holds valid or able to get UK SC clearance if UK resident, able to pass security checks including police background checks if outside of UK
  • Able to pass a medical as fit to work in a kitchen and in an austere environment
  • Excellent written and verbal English language sills

Salary Package:

  • £35,000-£37,500 p/a
  • 3 weeks fully paid leave every 10 weeks spent on-site
  • All travel, visas, accommodation, meals, laundry, uniform, etc. provided
